A Little Bit of Dinner, Not a Whole Production

Fresh ingredients and a prepared meal

Some evenings I open a recipe and immediately feel tired by the number of bowls it wants me to use. On those nights I make a little bit of dinner instead.

Tonight it was toast, roasted tomatoes, a fried egg, and a salad dressed in the jar I mixed it in. The meal took less time than deciding what to cook.

There was enough colour on the plate to make it feel deliberate. There was also only one pan in the sink.

I am keeping this as a reminder that cooking for yourself does not need to be a performance. Warm and easy is a perfectly respectable combination.
