The Soup That Improves on the Second Day

I like recipes that do not panic when you improvise. This soup began with onions, a tired carrot, and the last few potatoes in the cupboard.

I added beans, stock, and whatever herbs looked like they still wanted to participate. The first bowl was good. The second bowl, after a night in the fridge, was much more convincing.

It is thick enough to feel like dinner and loose enough to accept another splash of water when leftovers need stretching.

I make it when I want the kitchen to take care of me for once. There is always enough for tomorrow, which feels like a small act of kindness from my past self.
